Mecha - Neon Genesis Evangelion
Adventure - Rave Master,Fullmetal Alchemist and Fullmetal Alchemist Brotherhood(Highly recommended)
Sport - Hungry Heart

 

Sora has lots of comedy + ecchi(ya, a lot).
Kampfer more like Yuri.

 

I'll throw in Kotetsushin Jeeg for mecha.

Lolio. Air Gear is pro, combines all of them together. Although the stopped making the anime after the first season. The manga is still ongoing though.

You get a Plus for Hayate but you lose that and more for the mentioning of Seed/Destiny. But you also get serious approval for Zoids.

I totally forgot about dokuro chan, its amazing. Also I agree with the Eva suggestion, great choice.

Comedy - Detroit Metal City. If you don't laugh when watching this anime, then you have no soul. Kind of a guilty pleasure type of thing though. Oh, and +1 one for Hayate. First season is better.
Ecchi - lololololol.
Action - A bit broad... You could try Darker than Black. It only has a few good action scenes here and there though, so don't expect to see fighting in every episode. Samurai Champloo is also acceptable.
Mecha - Gurren Lagann. The only good mecha anime imo. But mostly because I don't like mecha.
Adventure - Try the .hack series. Also Baccano. I don't even have to explain this one.
Sport - Cross Game. Prince of Tennis also isn't bad.
Racing - No particularly good racing anime come to mind. Try Initial D.

 

There's a story, it usually takes place before, after, and during some episodes, it just usually takes a bit to get going, i think Season 1's started near the end of the season, same with 2, i only watched one episode of 3 though.

 

K-ON! is good too
