I used to love the movie "Shaolin Kids", it was really funny.The "The Once Upon a Time in China" series were great too.

Not really a Shaolin film, but it is a martial arts film (three rather) that you HAVE to see. They are fantastic. This guy is really flexible and acrobatic and is a great fighter. Apparently he does not use stunt doubles and no special effects are put into his fighting sequences. His name is Tony Jaa. I can't tell which of these are Shaolin or atleast Ancient China or Kung Fu themed movies, save for some I've already seen, but why don't you check out Golden Harvest
Golden Harvest produced some great kung-fu action films. I am a huge fan of their films. Police Story, Cannonball Run, Wheels on Meals were some great films.
Have you seen "Shaolin Death Song" ? I'm not sure on the exact translation, but it was called "Das todeslied der Shaolin", when i watched it my friend's place. An older movie, but it has lots of cool looking effects, my fav being the zombies
