Just a simple question ~ Is there anyway to play this on an EU PS2? (PAL)

If it is Modded, you can play it (you may run into color issues).

Would this run smoothly on an emulator instead?

Yes. Kingdom Hearts, Kingdom Hearts II, and Kingdom Hearts II Final Mix all work very well on PCSX2 0.9.6

You need a very good PC to run it. Talking you know... dual core processor, 512MB+ Nvidia video card, 2+GB RAM.

I am getting a very shaky screen and it fails to boot my disc. :(

On your PS2 or on your PC with the emulator? We'll need a lot more info to help diagnose the problem.

With the emulator i couldn't run KH2 from the disc, the screen was shaking and i would get the red screen saying i need a ps2 formatted disc. I tried different BIOS but no success! I don't want to buy a copy of Final Mix if i can't even get KH2 working :(

Try to run it from virtual drive.

    or from ISO(r1888).

    Both version are working well.

I don't have an ISO of it, i am using the actual PS2 disc.

You make one from it, use any burning programs(nero, Alchohol, daemon, etc).

I backed up my copies of Kingdom Hearts I and II to ISOs using DVD Decryptor, and they work perfectly. IMGBurn would work as well.
