OK since this is a recipe thread, how about we use this to trade favorite recipes & request some to others who might know how to prepare what we're looking for ;)

For starters, one of my favorite local foods:

    Bicol Express Recipe

    Estimated preparation time: 30 minutes
    Estimated cooking time: 30 minutes

    Bicol Express Ingredients:

    1/4 kilo pork, thinly sliced
1 cup Baguio beans (or string beans or peas)
3 cups long chili or jalapeno peppers
    1 onion, minced
    1 head of garlic, minced
    1 cup coconut milk
    1 cup coconut cream
    2 tablespoons of cooking oil
    Salt to taste

    Bicol Express Cooking Instructions:

    1. In a bowl of water with salt, soak chili peppers for 30 minutes then rinse and strain.
    2. In a cooking pan, heat cooking oil and brown sliced pork for a few minutes.
    3. In another pan, saute minced garlic and onion.
    4. Add to the saute the browned pork.
    5. Then add the coconut milk, bring to a boil and simmer for 10 minutes.
    6. Add the chili peppers, Baguio beans and cook until dish gets a little dry.
    7. Add the coconut cream and simmer until the sauce thickens.
    8. Add a dash of Salt to taste.

I like this dish WITH extra Jalapeno pepper mind you ;D

i think i have never tried Bicol express, but maybe I'll try it when i'm in a restaurant that serves that dish. One of my favorite dish when i was studying in college was the "Sisig", its good while its sizzling sisig but i love the sisig served by the local canteen. Too bad they closed down when i left school, i think i was only one making their ends meet. lol
