For a while now those with Touch2Gs could only run a tethered or semi-tethered jailbreak. (Meaning you would have to connect it to a computer or a device that would run at least 8bites of code each restart.) The redsn0w dev team did not want to release the untethered version, (Allow you to restart at any time) until the new models of the iPhone came out so Apple would not be able to make a work around. Sadly, yet in a good way, a company called Nitrokey got hold of the untethered release files and began to sell them. (When everything else was always free!) So to fight against their profit over something they did not do and should not charge for, the dev team released a patch that allowed you to run it untethered. http://www.ipodtouchfans.com/ has the files and many tutorials of how to apply the patch or start from scratch.
Though this may not seem completely in place for emulation news it still applies to hacking that allows you to download emulators for GB/GBA/NES/SNES/PSX for your iPod Touch/iPhone.

I do not currently have an iPod Touch so I can not help anyone with this, but everything you need to know is on http://www.ipodtouchfans.com/
I will have my iPod in about 5 days though since it's in the mail!

If anyone here has experience with a jailbroken iPod please share what apps you like and if you have Installous how it works and what apps from that you like the best.

I had tried to used a redsnow and xPwn with iRecovery on my Touch 2nd Gen, and it installed a few bugs on my system (stopped me connecting to the internet etc.). I simply deleted all of the source files and then it stopped. So yeah -.-
